Sweet Potato Fries


French fries are a classic American dish, which most people love, but unfortunately white potatoes don't make the cut for the paleo diet.  White potatoes are starchy and lack any real nutritional benefits.  However, sweet potatoes are a great alternative.  They are packed with vitamin A, and also contain high amounts of vitamin C, potassium, and vitamin B6.  
These sweet potato fries make a great appetizer when served with a few different dipping sauces (ketchup, peach barbecue sauce, or mayo).  They are so quick and easy to make, I often just eat them for a snack. 
  • 4-5 sweet potatoes, washed, peeled, and cut into thin strips 
  • 1 tsp. salt (add more if desired)
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika (or cayenne for spicier version
  • 1 tsp olive oil 
  1. Preheat oven to 400 F
  2. Line a baking sheet with parchment paper 
  3. Toss sweet potatoes, spices, and olive oil in a bowl until combined 
  4. Arrange sweet potatoes onto baking sheet and cook for about 20 minutes, turning the fries occasionally 
  5. Let cool for about 5 minutes before serving
